Menu Plan Monday – April 25
Last week’s menu had Great Grandma’s Beef Pie on the list. I did finally make it and after tasting it, I wondered why I thought I’d never had something like this before. I’m sure I have; it wasn’t near as awful as I thought it might be. It was actually very good – more of a down-home, warm and cozy type of meal. It probably won’t be a regular on our table but it’s not something I would completely avoid in the future either. I actually took a picture of it.

I did make the Pork Souvlak & Chopped Greek Salad. It was easy to make and one that I wouldn’t hesitate serving to guests. The recipe came from The Carefree Cook by Rick Rodgers.
My older children (all 4) were gone for 3 days, so while they were gone I took a break from the kitchen and we ate leftovers as well as one stop at Pizza Hut, so the only two meals I made at supper time last week were the ones above.
This week things should be back on track. I can’t believe this is the last week in April and it’s already time for a monthly menu.

This week’s menu…
Monday – Elk Roast, Baked Potatoes, Sauteed Mushrooms, Leftover Chopped Greek Salad and some other veggie from the refrigerator
Tuesday – Stromboli, Green Salad
Wednesday – Sweet n Sour Meatballs w/ rice, Green Salad
Thursday – Hoisin Beef w/ vegetables & rice, Green Salad
Friday – Tacos
Saturday – no leftovers; going to a birthday party where we’ll be served FOOD

I have totally enjoyed having a monthly menu in place. It has been a relief to me to not have to wonder every day, “what’s for supper?” I have an entire month that I don’t have to think about it! We have tried several new meals, too, which if you know me, is something I really like to do.
I was even surprised by company who arrived at supper time a few times this month and was so grateful that there was enough food to serve them, too.
I would really encourage you to try it one time and see what you think.
