A Desert Girl and a Sea Captain Fall in Love

I survived. One day of kitchen prep work and one day of intense kitchen craziness but it was all mostly all good. 🙂

This past weekend I catered a wedding reception for a friend of the family. My 5th wedding so far. Am I crazy for doing this? I really do think it’s fun but making sure the food is ready when needed can be a challenge. Especially if the facilities are not up to par. Thankfully, this kitchen was nice and big with 2 refrigerators and 2 ovens. The ovens were only residential grade so that’s not so nice but it IS two ovens, so I have to be thankful for that.

The bride, Cherith, married a ship captain from New Zeland and after the honeymoon, she will be moving across the ocean to join her beloved. Cherith incorporated the sea theme in different areas of her wedding which I thought was really special.

I always appreciate the kitchen help. They give of their time and work so hard just because they have a servant’s heart. May God bless them all abundantly.

There were 385 RSVP’s but with the 20% you take off for no-shows, we planned for 300 people.

We had four lines going through at one time so it kept us hopping back in the kitchen until things quietened down.

The menu was:

Grilled Chicken (grilled by a friend of the family)

3 different kinds of sauces (prepared by the bride’s mother)

Roasted Corn with Sauteed Bell Peppers and Onions

Roasted Red Potatoes

Simple Green Salad

Dinner Rolls

There were appetizers of chips and salsa, hummus and pita pockets as well as an olive tray.

There were some things I would have done differently, some things I learned as well, but overall it went really smoothly and all the food was hot at the appointed time. WHAT A RELIEF THAT WAS! 🙂
