Treats from My Kitchen
I’ve been preparing for Emily, my niece’s wedding the last few days. She got married today but I’ll save that for another post. You’ll just have to stick around the next few days so you can see all the pictures. 🙂
There were strawberries to be dipped in chocolate…
tarts to be filled…
and mini red velvet cakes to be assembled.
I baked all the tart shells early in the week but almost everything else was done on Friday with last-minute things completed Saturday morning before the wedding.
I dipped about 250 strawberries…
These are the Caramel Carmenita tarts.
The Lemon Merignue tarts.
And finally my mini Red Velvet Cakes
I transported everything to the reception hall in chafing trays like the one pictured above. The strawberries were mostly packed back into the plastic containers they were purchased in, separated by paper towels.
The lemon meringue tartlettes presented a bit of a challenge. When I removed the baking sheet from the oven, the pan tweaked after I set it on the counter. This caused some of the meringue to slide off the tops of the tartlettes.
Then I didn’t wait till it cooled enough and was trying to place them in my chafing tray from the baking sheet and one just completely fell apart.
I made about 150 mini desserts, not including the strawberries. It was a lot of work but I really do enjoy baking. So that was my contribution to the wedding reception. Emily’s a special niece and I felt honored that she would ask me to do something like this.
Stay tuned for lots more pictures of the wedding weekend in the days to come.

Ohmigoodness, Sis. Elisabeth! I don’t know if I’d have enough patience to make so many “little desserts”. I’m sure you were an incredible blessing to the happy couple!
