A Luncheon for 200 Campers
I have survived. There were a few several butterflies in the stomach and some short nights but I made it through!
Yesterday we had over 200 people here for a luncheon. There is a youth camp in the area, hosted by a church in Phoenix and it’s been a tradition for several years now that they all come to our place for lunch the day camp is over.
To get a big job done, it’s important to have good help. 🙂
And I was thankful for every one of them.
My sidekick for events like this and friend for 38+ years.
Excuse our disheveled appearance. Maybe we were feeling a little frazzled? 🙂
We had a Mexican themed dinner.
And the kids were quite hungry after having camp food for several days!
On the menu:
Green Chicken Enchiladas
Red Beef Enchiladas
Chicken & Beef Taquitos
Spanish Rice
Refried Beans
Southwestern Salad w/ Cilantro Lime Vinagriette
Tortilla Chips
I spotted something after looking at my pictures that I need to add to my supplies and that is about 8 matching trivets!
Oven mitts and bulky potholders do the job but they’re not so attractive, are they? 😉
The crowd arrived…
Of course we had to take some of the ones who stayed after the majority of the crowd had departed on a jeep ride.
The jeep is still running although a bit sluggishly. It’s needing some TLC.
Biggest group maybe to ever ride in here at once – 26 people.
There are so many ways to make memories and my husband and boys are good at instigating those times. They are good leaders and I really admire and appreciate that.
That night everyone was playing walleyball but then one of my boys started singing and pretty soon everyone was singing – inside the walleyball court where the acoustics are really good for that kind of thing. You turn out the lights and you are just surrounded by the melodious notes of everyone lifting their voices in praise to the Lord.
Finally it was time to say goodbye and after a beautiful display of fireworks, many of them departed and we were left with only 7 visitors.
But with only 7 visitors, things can still be rather eventful as we found out the next morning.
While the kids were on the balcony talking, a scorpion was spotted. Wesley decided to kill it using a plastic fork but before he could do the scorpion in, the scorpion got ahold of him and stung him. Ouch and double ouch!

Quickly the kids ran to the computer to research whether this scorpion was dangerous or not. While they are all hovered around the computer trying to identify what type of scorpion it was, my nephew Enoch walks by the room and asks for a chair. He collapsed into the chair, white as a sheet and started babbling, making no sense.
The kids abandoned Wesley to whatever his fate might be from the scorpion sting and ran to assist Enoch.
It was finally decided he was dehydrated. So they started giving him water while holding a trash can up to him since he was feeling quite ill.
Eventually he started acting normally.
Poor Enoch had sprained his ankle earlier so I guess you could say it was a rough day for him.
Oh, and and by the way, Wesley survived, too. 🙂
The next morning was farewell time to all our guests.

Quite the spread. So neat you can have so many people over at once and feed them all. Great helpers. Love the cute photo of Shalom!!!
