What to Do With All Those Cucumbers?

Why did we plant so many cucumber seeds when Serenity is really the only cuke lover around here?  Did we just want to see something, ANYTHING grow, beside a weed?  Or maybe we were concluding our 8 year study seeing how long seeds could sit around before they would no longer germinate?   It might have been a little of all the above, but mainly because I wanted to make pickles. 

Lo, and behold, all the seeds sprouted and produced plenty of cucumbers for me to make my pickles, along with a few more from a friend.

I made wonderful Bread and Butter Pickles using my Grandma’s recipe.  We love them on sandwiches and in pita pockets and they’re a cinch to make.

Then I had to make some Cucumber Relish for my first time.  We have hamburgers/hot dogs about once a year so this relish should last us till all the kids are grown and married for a few years. 

Of course, with six kids there’s always someone willing I can coerce to help.  Today it was my two youngest, Justus(4) and Audrey(22months).

The garden is starting to slow down.  Fall has arrived, the leaves are turning brown and starting to curl.  Autumn – the time to store away in preparation for the cold winter months.  I guess you can’t really live on pickles but it sounded good anyway.

    Looks like you have lots of great goodies! All the jars lined up look so pretty.

    We've never had luck with cucumbers in the past, but ds1 and I have some seedlings just starting out now. He wants me to make pickles (if we are fortunate enough to end up with a harvest), but I don't have the first clue about that. I have a feeling dh will eat all the cucumbers anyway as they are something he really enjoys and rarely gets to have since the price at that health food store is quite high.

    Your pickles look wonderful, I have never done pickles before. I have done relish, but with zuchinni. Don't you just love looking on a shelf full of your harvest?

    Do you make your pickles with regular cucumbers or are they the "pickling" cucumbers? We grow reg. cucumbers and I wondered if they would work. Anyway, I would love to try yours – they look wonderful and your helpers are awfully cute too!

    Those pickles are deloucious! The relish mite be in our pantry for quite a while. But I am not so sure about the pickles lol. 🙂
