    I’m joining up with I’m an Organizing Junkie with this monthly menu. I’m a little under the weather as I type this – also had my parents here this weekend so I’m running behind on getting my May menu up. April was the first time I tried writing up a menu for the whole month.  Previously, I just wasn’t interested.  Well that mindset has completely changed.  I’m LOVING it.  Having an assigned day for certain types of foods simplifies the choosing of recipes.  Elk on Monday, Italian on Tuesday, Hamburger meat on Wednesday and so on.  You can read about it here in my post called Monthly Menu Plan for April…

    The long awaited post on Zachary’s bees!  Zachary’s interest started several years ago.  Although he is unable to remember exactly what inspired him to be a beekeeper we do know he found 2 dilapidated bee hives while doing some clean-up as a 4-H volunteer a few years ago.  He brought them home and shortly after that there was a swarm of bees found on a tree in our front yard.  He wrapped himself up like an Eskimo (since he had no suit and veil at that time), put on some ski goggles and went to capture the swarm.  He looked quite hilarious and I’m really wishing I could find that picture!     Our homeschool cabinet needs tidied up now and again. Little people put things away cram things in any way they can… After about 15 minutes, order was restored. That messy cabinet was an eyesore.  It’s funny how a little 15 minute organization spurt can make one feel so much better. Joining up with Tackle it Tuesday.

    This week I tried my hand at making Feta Cheese with goat’s milk.  We’re getting about 2 gallons of goats milk a day and were needing to get creative with it! We finally got around to making Resurrection Cookies. It’s a little late now but here’s a link to how you can make them.  Next year, right?   • Menu Plan Monday – April 25

    Last week’s menu had Great Grandma’s Beef Pie on the list.  I did finally make it and after tasting it, I wondered why I thought I’d never had something like this before.  I’m sure I have; it wasn’t near as awful as I thought it might be.  It was actually very good – more of a down-home, warm and cozy type of meal.  It probably won’t be a regular on our table but it’s not something I would completely avoid in the future either.  I actually took a picture of it.
