Best White Icing Ever

When preparing for a birthday party, for some reason I never feel like I have the time to make a birthday cake from scratch. I usually buy a cake mix, maybe make my own icing or purchase some. I really dislike store icing and yet I didn’t have any homemade icing recipe that I was bowled over by – until Justus’s birthday.

I found one at Allrecipes that I’m hooked on. Honestly, I kept going back for more cake just so I could have a little more frosting. Of course, I’ve always been a frosting gal. Give me some icing, along with ice cream, and I’m happy. But I think I have a keeper icing recipe this time.

Best White Icing Ever

INGREDIENTS
3 cups confectioners’ sugar
1 cup butter
2 tablespoons water
1 teaspoon vanilla extract

DIRECTIONS
In a large bowl, combine sugar, butter, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won’t look like Icing at first, but keep the mixer going for a full five minutes, and then you’re done!

Note: If you’re not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

(The original recipe called for 4 cups of confectioners sugar but I reduced it to 3. I also substituted butter for the shortening.)

    I don't know if you are still on here, or not, but I wanted to tell you that my daughter called me today wondering if I had my mother's recipe for white icing. I have made it many times but wasn't sure if I actually had it right; no measuring or anything, but it was always gobbled up regardless. I Googled it, and found you, thank you so much for actually giving measurements to my memories! Thanks from Montana, and my Wyoming daughter (both actually Texans) thanks you, too!
