Pecan Tassies
definition of tassie – A cup or goblet for drinking wine; A decorative ring or plug at the end of the barrel of a pen; A small tart or miniature pie
Yields: 24 tassies
Shells:
1 (3oz.) cream cheese
1 (3oz.) cream cheese
½ cup butter
1 cup flour (white or wheat)
Filling:
¨ø cup chopped nuts, divided
¨ø cup chopped nuts, divided
1 egg
¾ cup brown sugar
1 Tbsp. soft butter
1 tsp. vanilla
Dash of salt
Cook cream cheese and butter at low temperature until soft. Stir in flour; chill. Shape into 2 dozen 1" balls. Place in well greased mini muffin tins. Press dough along bottom and sides with fingers. Mix half of the nuts with the egg mixture and pour in shells. Top with remaining nuts.
Bake at 350°F for 25 minutes or until done.
