A Clean Inbox and a New Recipe

I filed some papers but most of them I chucked. What is left in there is a paper I need to type up, which I put a date on, and if it is not typed up by then – out it goes. (This is putting the tip I told you about into action.)
Now, I know you didn’t have to come back to see my almost clean inbox but since you did…
May I share a soup recipe that I made last night that went over very well with the family. It is from the Betty Crocker Cookbook for Women. I really like this cookbook. Almost everything I’ve made in it has been quite tasty. The chocolate fondue recipe I shared with you awhile back came from this book.
Slow Cooker Southwest Chicken Soup
1 lb. boneless skinless chicken thighs, cut into 1-inch pieces
2 medium dark-orange sweet potatoes, peeled, cut into 1-inch pieces (2 cups)
1 large onion, chopped (1 cup)
2 cans (14.5 oz each) diced tomatoes with green chiles, undrained
1 can (14 ox) reduced-sodium chicken broth
1 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1 cup frozen whole kernel corn
1/2 cup chopped green bell pepper
8 yellow or blue corn tortillas
2 Tablespoons chopped fresh cilantro
1. In 3 1/2 – 4-quart slow cooker, mix chicken, sweet potatoes, onion, tomatoes, broth, oregano and cumin.
2. Cover; cook on low heat setting 7 to 8 hours.
3. Stir corn and bell pepper into soup. Increase heat setting to high. Cover; cook about 30 miutes or until chicken is no longer pink in center and vegetables are tender.
4. Meanwhile, heat oven to 450°F. Spray 2 cookie sheets with cooking spray. Cut each tortilla into strips; place in single layer on cookie sheets. Bake about 6 minutes or until crisp but not brown; cool. Spoon soup into bowls. Top with tortilla strips. Sprinkle with cilantro.
Changes I made: I did not use a slow cooker but my stove top instead. I fried my tortillas since I was running behind.

You're such an inspiration! However, it's funny! Everytime I get in the mood for decluttering, it seems that those that are close to me do too 🙂
Maybe I'll share with you some of the things that have worked for me…. but for now…. gotta get back to work on our Invention's Day project 😛
PS I didn't try any of that soup yesterday, but it sure smelled good! Now I can make it myself! THANKS!
