Feeling the Love Again
I’m pleased to tell you that I’m back in the family’s good graces after last weeks memorable family fun night.
And all it took was some chocolate. I bought a little fondue pot from Ross and last night we finally used it. All we had to worry about was not getting stabbed.
Dark Chocolate Fondue
8 cups assorted fresh fruit (sliced kiwifruit, sliced bananas, strawberries, cherries, cut-up pineapple, green grapes, dried apricot halves.
1 can (14oz) sweetened condensed milk (not evaporated)
1 cup semisweet chocolate chips (6oz)
1/4 cup dark chocolate syrup
1/4 cup boiling water
2 teaspoons instant espresso coffee granules
1 teaspoon vanilla
1. Prepare fruits; set aside.
2. In 2-quart saucepan, cook milk, chocolate chips and chocolate syrup over low heat 5-8 minutes, stirring frequently, until chips are melted.
3. In small bowl, stir boiling water and coffee granules until granules are dissolved. Stir into chocolate mixture. cook over low heat 5 minutes, stirring frequently. Stir in vanilla. Remove from heat; pour into fondue pot.
4. Using fondue forks, dip fruit into chocolate mixture.
This recipe came from Betty Crocker Cookbook for Women. I had to laugh at the sidebar note they have on the page. It says:
Dark chocolate contains phytonutrients that are good for your health. A bit of chocolate, as in this recipe, especially when served with fruits, is a tremendous way to get many nutrients.
So, if you’re looking for a healthy dessert I guess this is it, folks. After all, Betty Crocker gives it the thumbs up and you wouldn’t want to mess with a cultural icon.

In Colorado my favorite date night was to go to a Fondue rest. called Mona Lisa. Oh it was perfect even the location inside an old Victorian Home.
I may have to break out my fondue pots….
