I wanted to respond to the questions you left on my blog today.

1) Yes, I do dry my pasta. I have a drying wrack that was purchased for just that purpose. Once dried, it'll keep for a couple of days, maybe longer. I think you can freeze dried pasta too but I haven't tried that.

2) It does take time to make fresh pasta, so I save the effort for special occasions (birthday dinners, having friends over, etc). You have to make the dough, then run it through the pasta machine several times to get the thickness/thinness just right, then you put on the spaghetti attachment and run it through the pasta machine again to cut it. Although it is more effort, it's well worth it. For the times when we're in more of a hurry, I have store-bought pasta on hand.
