2013 EXPO Show & Sale

The EXPO show and sale is over.  The kids had a lot of fun and placed well in their classes. Justus Wallace – pig farmer   After the confirmation class, where Justus placed 1st in the Yorkshire division, Whitey went back to his pen and stretched himself out with his head in the food bowl.  I guess he was wore out.  It must be hard work being a prize pig. Audrey zipped around on her bike for 3 days. I was so proud of Serenity. With her being on the shy side, she has had to work on this.  This year she went into the ring exhibiting confidence. She won Reserve Best of Class for lamb confirmation. Sale day arrived and it was time to…

Celebrating 24 Years of Marriage

Our 24th wedding anniversary was yesterday and every year it’s a busy time because the kids are getting their 4-H animals ready to show and then to sell at the auction. But just like my birthday back in March, Russell decided to take me away. I’m thinking “I’ve got a wedding reception to plan and a myriad of other things to do but whisked away I was. Our first stop was for an hour-long massage. A sister at our church gave me a gift certificate for one a few years ago and it hasn’t worked out till now to use it. A person could get used to things like that. Then we went to Sedona but not to stay in a tent this time. This…

The Wedding Day

The wedding day that Austin & Claire had waited for so long such a short time finally dawned and outside all was covered with a fresh layer of snow. Beautiful but cold. Brrr. When we arrived at the church, Claire was there waiting for the moment that she would slip her wedding dress on, even though that was several hours away. But we had work to do.  Although they were having a catered meal, my sister wanted to have appetizers while the guests were waiting for the photographers to finish taking pictures. This is one of my sister’s. She’s a pro at getting things done in the kitchen. My niece who read the book Eat that Frog months ago and hasn’t stopped since.  Seriously.  …

Austin took a look about him and fell in love. There were tears, joy, plenty of laughter and thankfulness to God this past week. My nephew Austin married the light of his life, his other half, the heartbeat of his heart. Austin & Claire are now married and what a happy joyous occasion it was. But back to when we arrived. Not wanting to miss a single possible moment with friends, Because we were on the budget flight using our frequent flyer miles we flew out to Michigan on the red-eye flight landing at the daylight hour of 6:30a.m.  Uh, although we dearly love our friends we really would have liked a more sane flight schedule and even though our friends happily picked us up,…

The love bug has surely struck those around us this year and March seems to be a popular month for each of them to make their vows.  First it was Lydia’s, then this past weekend was Ashlynn’s.  I’ve known Ashlynn’s parents since before Ashlynn was born and so when I saw the duress my friend was under trying to figure all the details out of the reception, I volunteered to do the main part of the meal for her. She wanted an Italian dinner of lasagna and since that was the meal I had made back in 2011 for Heather’s reception, I felt comfortable doing it.  I learned so much this time around and am very grateful for the learning experience.  Everything came out very…

An Unusual Place for an Engagement Party

Did you know it is possible to throw an engagement party in an airport? My dear husband decided we should welcome back the happily engaged couple who had went, along with my son, to a youth retreat in Tennessee and then up to visit friends in Michigan, as well. It was a red-eye flight, the airport was quietening down after a day of thousands bustling through its corridors.  Restaurants had closed but not before we had received permission to set up in one of them. Justus and Audrey were so happy to see their brother Zachary.  Since he became engaged they have really latched on to him.   Pretty nice, Russell.  Pretty nice.  (I think he did a beautiful job, don’t you.)   Hey, we look pretty good for it being past…

An Update on My Gorgeous and Fruitful Garden

I thought it was about time for an update on the farm. My gorgeous and fruitful garden that I planted May 25 has been producing for a short while. I don’t feel that it has produced as much as it should have but my kids think I ought to be pleased. My Mormon neighbor (aren’t they supposed to be good gardeners?) told me all her tomatoes died this year because of the heat. Mine are all living, so I guess I should be quite grateful and thankful! It is so pleasing to walk out to the garden with my little basket and gather bunches of mint for tea or to gather tomatoes as they ripen from day to day, or to pick green beans for supper (I’m…

A Peacock Themed Wedding and Reception

What happens when girls get to be about 20 – give or take a few years?   The fall in LoVe.  After they fall in love, there’s a wedding.  Well that’s where I was this past weekend at another niece’s wedding. Emily’s wedding in March and Kristen’s in May. I didn’t get a lot of great photos but I begged some off of a friend that took some really great ones.  The so-so pictures were taken by me and the really good ones were taken by CF Shalom Photography. An invite to a very special day. Little details… The peacock theme started with the invites and continued at the wedding.  A very nice touch! A relative of the bride put a few of these large bouquet’s together. I loved…

Making More Room in the Pantry – Installing a Shelf

How’s your weekend going?  I’m off to my niece’s bridal shower today (yes, another one is getting married!) but I wanted to share with you a quick project that we did in the pantry this week. For Emily’s wedding  I had bought the commercial plastic wrap for all the little mini desserts I made and transported to the reception hall.  I didn’t use very much of the wrap but it served its purpose well.  I knew I wanted to have the plastic wrap somewhere where I could access it easily in the future but where.  My pantry was quite full already and there was not room for this large box of wrap. This is my appliance center which holds my grain mill, juicer and bread machine.  The bread machine gets…

Aaron & Emily’s Wedding Part IV – the Reception

Well I’m pretty sure by now you all are heartily wishing I’d finish all the posts on the wedding.  That I hope to do today!  So bear with me just a teensy bit more, ‘kay? The wedding reception hall was almost adjacent to the wedding chapel.  The setting at the campground was quite pretty and you can see what it looked like here.  In the 5th picture down, it shows the guests waiting to enter the chapel and you can see the reception hall at the back of the picture.   But before the reception could begin, there were pictures to be taken… (Emily’s family) Heidi (the flower girl) was feeling right at home. The centerpiece for each table was a square of burlap with some lace on…

Aaron & Emily’s Wedding Part III

Then the wedding began! Bro. Dave and Zachary provided the music before the ceremony began.   Sorry about the pictures to come.  They really aren’t very good. The groomsmen came in – Aaron being very expectant.  But then, where were the girls?  The guys probably waited about 10 minutes before the girls finally showed up. When the men first came in Zach & Bro. Dave finished the song they were playing and then the girls song (canned music) started.  They realized the girls weren’t there and it faded away; then Zach & Bro. Dave started playing again.  It was quite funny because they would come to the end of their song and expect the girls to be there but they weren’t – so they’d start again.  Finally,…

Treats from My Kitchen

I’ve been preparing for Emily, my niece’s wedding the last few days.  She got married today but I’ll save that for another post.  You’ll just have to stick around the next few days so you can see all the pictures. There were strawberries to be dipped in chocolate… tarts to be filled… and mini red velvet cakes to be assembled. I baked all the tart shells early in the week but almost everything else was done on Friday with last-minute things completed Saturday morning before the wedding. I dipped about 250 strawberries…  These are the Caramel Carmenita tarts. The Lemon Merignue tarts. And finally my mini Red Velvet Cakes   I transported everything to the reception hall in chafing trays like the one pictured above.  The strawberries were…

Are you all aware of the trend these days to have a variety of desserts (preferably bite sized) offered at weddings?  I’ve been to a few weddings where there is no wedding cake or if there is it’s just enough for the bride and groom to cut and feed each other.  Personally, I like the new trend.  A variety of scrumptious (hopefully) desserts to choose from… ahhh, love it. It’s not good for the waistline… Oh, why did you have to go and remind me?!   I was salivating over some delicious confection drizzled with chocolate.  Loaded with calories, of course. My niece, Emily is getting married this Saturday and she has asked me to make a dessert for her wedding.  Since I like to bake, I couldn’t stop at one, so…

I Survived

I made it through, survived and thoroughly enjoyed catering my first wedding reception!  You can read about how I was asked to do this and some of the preparations that were made here.  Twenty-four gallons of sauce!  Although there were 265 RSVP’s, there were probably only 170 at the wedding so there was a lot of extra food.  We sent home lasagna’s with many people who helped and some who were hosting guests.  We had a luncheon here at the house on Sunday after the wedding and you probably know what we fed them.  Lasagna! Saturday was the wedding, so we headed to Flagstaff on Friday.  I was hoping to get there early but it didn’t work out and we arrived at 5:00 p.m.  We had about…

I have always enjoyed cooking and planning parties, so being asked to cater a friends wedding was a treat.  Cooking for 70-100 is something I have done so frequently that I’m very comfortable with it but the latest count for this wedding reception is 260.  Oh, dear. Heather wanted to have Italian, and when I first heard that I thought “Oh, that will be easy, no problem.”  What I had not counted on was the fact that the reception hall has only 1 oven.    Just how was I going to juggle cooking that many lasagnas in one oven?  Fortunately, that has all been worked out – we have a friend that owns a warming cabinet that will also cook.  That will hold 12, they will be able to…

A Beautiful Event

I feel like an official caterer after this past weekends event!  My sister planned a reception for her son, (who was married in Florida this past February) here in Arizona.  What a beautiful occasion it was.   We prepared for 250 people.  My sister had never planned an event on this scale before (who really has ??).  Three days before the reception, work commenced. Things like rolling the silverware in a napkin… Everyone was a help.  We were able to accomplish so much with all the helping hands.  It was so special to work on everything as a family.  A memory I will cherish. I bought these wonderful stainless steel bowls that hold 30 quarts (they’re huge!) for $21 at the restaurant supply.  They were indispensible.  After…
