Roughing It for 5 Days

I really don’t even know where to begin. Hunting Camp 2012 is over but the memories just still keep coming on.  It was a good year. There were 7 elk tags in the camp and all 7 were filled.  We’re all very thankful because we know we have plenty of good healthy meat for the next year. We were so happy for Serenity because she tagged out opening morning. Many times she’s had to hunt all week before she got her’s, so this time she was able to spend more time at camp.  I looked at her and thought I saw Annie Oakley but then I looked again and it was Serenity.   One shot, standing up, from the shoulder.  Aaaammmaaazing girl.   Wesley tagged…

Hunting Camp is Here!

The elk hunting season is here and we’re headed out for another memorable year.  It looked like camp was going to be smaller this time (only about 40), but we’re almost up to 60 now. There seems there might be a small hitch in the weather. It seems it wants to rain. Like really bad. 90% chance.  Not good, but thankfully we have the wall tent in which we can all gather and a wood burning stove to keep us toasty, games to play and plenty of people to fellowship with.  Oh, and food.  I think we’ll be alright after all!       See you all next week!   I don’t envy the hunters though.:)

October Family Updates Part III – Coues Deer Hunt

We’re getting there.  Slowly but surely we’re making it through the family updates for October.  Part I was general news around the homestead and Part II was our annual elk hunt. The third week of October was another hunt – this time for Coues deer.  It was Zachary and Ethan’s hunt. (Ethan is my good friend Tina’s son.)  Ethan has wanted to go elk hunting for a very long time but getting an elk tag in Arizona is not always that easy.  So, he settled for a Coues hunt with Zachary. October Family Updates Part II

How could I forget when I was posting our family updates for October that Justus and Audrey got the chicken pox?  They started feeling sick to their stomache and had a slight fever and then the next day litte dots started showing up on their faces and other places.  It took us awhile to figure out what it was. They did so well and tried really hard not to scratch. October always seems to be a short month for me because of the general elk hunting season here in Arizona.  We only go for a week at the most (I went for 4 days this year.) but we do a lot of planning ahead of time and I do as much cooking beforehand as possible and then there’s the packing…

Today is going to be a short post because we’re leaving for our annual elk hunting/camping trip.  I’ll be cooking on a camp stove and will even be doing some foil packet cooking for about 60 people.  You say 60 people?  Yes, we have a rather large group of us that go hunting/camping every year. It’s a really nice time for us all.  We make a nice big wagon circle (trailers and tents), have a big campfire and group meals every night. Kids are running around having a good time, games are being played and we’ve even had ”tea” in the Wall Tent Parlor (a fancy name for our wall tent).  The real reason we go is for the hunt, so we’re happy when the victory sound…

Thanksgiving Tablescapes Inspiration

I’ll be cooking away the next few days since the hubby and boys will be going on their last hunt of the year.  I think we’ll be well stocked for the coming year.  We already have 2 elk that’s ready to be picked up at the butcher and now we may have another one?  This hunt is going to be all about horns so they will spending long days in the woods looking for that monster bull.  I have to come up with 7 suppers that are easy for them to put together heat up.  Lucky for them they will have my middle son, Zachary along to be camp chef.  The rest of them are a bit challenged in the kitchen. Elk Hunting Camp 2010 – Part I Here’s Part II of our Elk Hunting Camp.  On Sunday morning, no one hunts and we have a morning church service at our Church in the Wildwood.  It’s always a lovely time with the breeze blowing through the trees and having nature around you.  We always have a brunch about 10.  We do this so that we can give the hunters a chance to rest since they’ve been getting up very early the other days.  It also gives us time for the weather to warm since its in the lower 30′s at before daybreak.  We had a beautiful spread.  This is just a portion of what was offered.  My friend got fancy and made the tiered bread plates using styrofoam cups.  I thought…

Elk Hunting Camp 2010 – Part I

I survived. Elk Camp lasted an entire week for some of us and that included our family. It was a delightful time albeit a bit hectic for me. There were a lot of campers this year. More campers than hunters. A few days there were 97 of us (including all children and babies). That’s a lot of people in the woods! I organize all the evening meals so that there is some cohesiveness to the group. Breakfast and lunches everyone plans and eats on their own.  Anyways, back to our shared evening meals.  The first night is soup night. Week in Review 10/3/10

Remember those 400 lbs. of apples I told you we picked?  Well this past week was spent trying to use them up.  The easiest part was the picking of the apples.  So beware, if good fortune should come your way and someone offers you all the apples you want for free, remember… the easiest part of apples is the picking! If you haven’t realized it yet, we do believe in child labor encourage all our children to help. More apples. After juicing 9 1/2 gallons and coring 45lbs of apples, Zachary’s starting to get sick of seeing them.  Serenity’s not looking too thrilled either. Week in Review 9/12/10 – Reunion!

My two oldest boys arrived home Tuesday. Finally! Seth was gone to Ohio for 2 months and Zachary to Manitoba, Canada for 6 weeks. They both flew home on the same day with connecting flights in Minneapolis. Neither one knew the other had a layover in Minneapolis since we had purchased their tickets here at home. Russell arranged for them to be on the same flight together and to even have seats right next to each other. Chicken & Potato Packets Over Coals

At our elk hunting camp everyone joins together in the evenings for supper.  I plan the menu and assign each person what they need to make/bring.  If the husbands come without their wives I always assign them foods that require no last-minute preparation.  This year I decided to try grilling one night.  Now I’m the type to try new recipes on my guests but since I’m making an effort to change that habit, I did practice this at home – once.   It turned out so well that I felt confident we could do it at camp.  I was a little concerned about wrapping the chicken in aluminum foil because of all the negative things I’ve heard aluminum does for you, but then my niece recommended I use parchment paper first, followed by…

Elk Hunting Camp 2009

I survived our annual elk hunt.  Dirt, dust and campfire smoke was the worst of it.  The best of it was making good food for hungry hunters, spending time with friends and getting to know new ones.  Our family, as well as my sister’s family, were there to the bitter end (an entire week!).  It was so good to spend time with them.  I didn’t get this dirty but I felt it.   The kids have the best time and really look forward to the hunting camp.   Slamwich & Dutch Blitz were the favorite games this year.   We had over 60 people this year.  What happened to going to the woods for a little peace and quiet?   Russell was only getting about 3-4…

Time for our Annual Elk Hunt

The elk hunting season is upon us and so the conversation at our house has centered around camping and hunting for the last few weeks.  Wesley is trying to get his hunting gear in order.  He was referred to a site called CamoFire and he faithfully checks it when he wakes up.  They offer new deals on hunting gear at least once a day.  If you have an avid hunter in the family, you might want to check it out. Trip to Ohio Had a Few Hitches

Things started out smoothly although we were  a bit behind schedule in our departure.  Nothing new about that.  We just never seem to leave at the predetermined times we set for trips. The van was loaned to us from a sister church.  It had a few quirks – like once in a while the heater kicked in blowing out hot air.  Not a good thing when it’s 90° outside! The real hitch in the trip was Seth’s new truck.  The transmission went out before we were half-way and all he had left of his standard transmission was 4th gear.  There were times the guys had to do this… but that was only part of the time.  There are other ways of getting a truck to move.  One is to…
