Only 8 days till the wedding! Everything seems to be going quite well.  Whew! Serenity made all the bread for the rehearsal dinner the other day.  Rosemary bread to go along with the lasagna we’ll be having.  I’m having so much fun getting together things for the rehearsal.  I’ve used my Silhouette machine quite a bit.  Still loving it. I was so proud of Serenity.  She had a long day making all the loaves! Justus’s birthday decorations were still up.  But I finally took the time to remove them after this picture.  Aren’t you proud of me? I Survived

I made it through, survived and thoroughly enjoyed catering my first wedding reception!  You can read about how I was asked to do this and some of the preparations that were made here.  Twenty-four gallons of sauce!  Although there were 265 RSVP’s, there were probably only 170 at the wedding so there was a lot of extra food.  We sent home lasagna’s with many people who helped and some who were hosting guests.  We had a luncheon here at the house on Sunday after the wedding and you probably know what we fed them.  Lasagna! Saturday was the wedding, so we headed to Flagstaff on Friday.  I was hoping to get there early but it didn’t work out and we arrived at 5:00 p.m.  We had about…

 I have always enjoyed cooking and planning parties, so being asked to cater a friends wedding was a treat.  Cooking for 70-100 is something I have done so frequently that I’m very comfortable with it but the latest count for this wedding reception is 260.  Oh, dear. 🙂 Heather wanted to have Italian, and when I first heard that I thought “Oh, that will be easy, no problem.”  What I had not counted on was the fact that the reception hall has only 1 oven.    Just how was I going to juggle cooking that many lasagnas in one oven?  Fortunately, that has all been worked out – we have a friend that owns a warming cabinet that will also cook.  That will hold 12, they will be able…

Making Breakfast Ahead

I have the hardest time making breakfast in the morning.  I wake quite early but to hustle into the kitchen at 7a.m. and to get started on a big hot meal is really difficult for me.  So, I’ve been contemplating making breakfasts’ in bulk and freezing them, minimizing my preparation time in the morning.  I’m at the point where I’m ready to DO it. I’ll still be making baked oatmeal, waffles and such because those are quick and easy but we can’t have that every day, can we?  Or can we? 🙂  My husband’s grandpa had oatmeal every day for years.  That made life simple for everybody, didn’t it?  🙂  But…  I just don’t think that would go over to well at our house.  Now what I need are…

Cook Once… Eat for a Very Long Time

I’ve been intrigued with the idea of once a month cooking for awhile now.  The thought of having meals already made that need little to no preparation sounds lovely.  Once,  a long time ago, I did give it a try but was quite dissatisfied with the types of recipes suggested for once a month cooking.  I suppose I was not putting on my own thinking cap to come up with more creative ideas than what was suggested in the book, but regardless I was not enticed to keep trying.
