Save Time and Pre-Make Your Own Biscuit Mix

Using a Master Mix is a way to save yourself time in the kitchen when it’s time to cook something tasty for the kids, the whole family or even just you and your husband.   Biscuits and gravy are one of my family’s favorite breakfast meals but for me, my least favorite part is mixing up the biscuit batter.  Well, not really that but the part where you take the pastry blender and cut the butter into very small pieces.  That’s my dread. But what if I could make a mix that would potentially be enough for my family to have biscuits 3-4 times?  The way you can do that is to make a master mix, consisting of all your dry ingredients, and then later you add your water or milk. I…

How is it possible to have written so much about how to make the little breakfast sandwich, the egg mcmuffin?  Have I possibly made something that is quite simple – complicated? I hope not because I think everyone should try their own homemade egg mcmuffin at least once in their life.  Notice, I said homemade.  No McDonald’s version, okay? Egg McMuffins are great for a breakfast on the go or when you’re sitting down to the breakfast table.  Although you’re trying to do several last minute things at once when you make these, part of the solution is to have everything ready to assemble and all your ingredients on the counter (mise en place) before you start cooking. In my list of “The Players”, I mention herbed…

If the thought of ordinary oatmeal sounds unappealing, try this variation and see what you think.  Do go to the extra effort and make the honey-toasted walnuts.  They’re scrumptious! The recipe is from Epicurious. Old-Fashioned Oatmeal with Apples, Raisins and Honey-Toasted Walnuts Ingredients: 1/4 cup coarsely chopped walnuts 1 tablespoon honey 3 cups water 2 cups old-fashioned oats 1 teaspoon salt 1 cup unsweetened apples juice 1 cup finely chopped peeled apple 1/4 cup (packed) golden brown sugar 1/4 cup raisins 1/2 teaspoon ground cinnamon 1/2 cup nonfat vanilla yogurt 1.  Stir chopped walnuts in small nonstick skillet over medium heat until lightly toasted, about 3 minutes. Drizzle honey over and stir until honey thickens and coats nuts, about 2 minutes. Remove skillet from heat. Stir to…

Breakfast Fruit Parfait’s

A Quick Breakfast that is… √ Easy √ Colorful √ Delicious Fruit Parfait’s Fruit Parfait’s can be made with any variations of berries but here is the one I made. Ingredients: Strawberries Blueberries Bananas Vanilla Yogurt Granola I think this is pretty served in individual serving bowls.  Place a spoonful  of vanilla yogurt in bottom of dish, followed by strawberries, blueberries, bananas.  Next add another spoonful or two of yogurt adding more berries and bananas.  Top with vanilla yogurt and a sprinkling of granola.  Enjoy!

No pictures to go along with this recipe.  I’m pretty sure I wouldn’t be able to take a good enough one anyway.  There’s an art to food photography that I’ve still to master.   Let me know what you think, if you make this.   Make your own fresh salsa for this recipe. Canned salsa just doesn’t work! Tomato Salsa  2½ cups diced (¼ inch) tomatoes (2-3 large ripe tomatoes) ¼ cup finely chopped sweet onion 2 Tbsp olive oil 2 Tbsp chopped fresh basil (or dried) 2 tsp fresh lime or lemon juice 1-2 tsp minced jalepeno ½ tsp salt   4 large eggs 1 cup grated Monterey Jack or mozzarella cheese Toasted bread   Preheat the oven to 400°F. Brush four (8-ounce) ramekins or some…
